JALAPENO CHICKEN 
2 c. chopped onion
2 tbsp. butter
10 oz. pkg. frozen chopped spinach, cooked and drained
1 pt. sour cream
2 cans cream of chicken soup
6 chopped jalapeno peppers or 1 can chopped green chilies
4 chopped green onions, tops only
1/2 tsp. salt
12 oz. pkg. Doritos
4 to 6 c. chopped cooked chicken
2 c. grated Monterey Jack cheese

Saute onion in butter. Blend in spinach, chilies (or jalapenos), sour cream, soup and salt. Alternate in a large casserole dish. Layers of Doritos, cheese, and creamed mixture. Top with more cheese. Bake at 350 degrees for 30 to 40 minutes.
