OLD - FASHIONED BANANA PUDDING | |
1 rounded c. sugar 1/8 tsp. salt 1/3 c. flour (less 1 tbsp.) 1 tbsp. cornstarch 2 c. milk 2 c. half & half 5 egg yolks, slightly beaten 1 1/2 tsp. vanilla flavoring 5 med. size bananas, well ripened 1 box vanilla wafers Blend the sugar, salt, and flour. In a saucepan, combine the mixture with the half & half. Heat the 2 cups of milk to boiling; add to half & half mixture, stirring constantly. When heated through, remove from heat. Carefully stir filling into egg yolks, small amount at a time, and continue cooking until thick. Remove from heat and stir in vanilla. Line a 8 x 12 inch dish with vanilla wafers. Top with 1/2 of the sliced bananas. Pour 1/2 of the pudding over the bananas, then repeat the layers of bananas and pudding. Top with meringue. Bake at 350 degrees until brown. |
