SOLE ROLL UPS WITH RICE
FLORENTINE
 
8 sm. sole fillets (1-1 1/2 lbs.)
Salt
Paprika
1/4 c. butter, melted
Chopped fresh parsley
1 (6 oz.) pkg. UNCLE BEN'S® rice florentine
1 c. Hollandaise sauce

Cut fillets in 1/2 lengthwise. Season with salt. Roll up fillets and secure with toothpicks. Arrange in baking dish. Spoon melted butter over fish rolls, sprinkle with paprika and parsley. Bake uncovered at 350 degrees until fish flakes easily about 25 minutes. Meanwhile, cook the rice florentine according to the package. When done place fish on top of rice and spoon Hollandaise sauce over the top.
