KASHI PILAF | |
Kashi is a commercial or homemade mixture of whole oats, long grain brown rice, whole rye, wheat berries, triticale, buckwheat, barely and sesame seeds. This recipe uses the commercial mix. 1 c. kashi 2 c. bouillon (unsalted) 1/2 c. minced shallots 1 c. sliced celery 1 c. coarsely grated carrots 1 tbsp. minced parsley stems 2 tsp. minced fresh dill weed 8 med. mushrooms, sliced 2 c. vegetable or chicken Place kashi in a 6 cup pan. Take 1/4 cup of the bouillon and pour it over the chopped shallots, celery, carrot and parsley stems. Cover closely and microwave 1 1/2 minutes or blanch in a Teflon pan, covered for 5 minutes. Add to kashi with remaining ingredients. Cook 1 hour. 4 cups. Season to taste. |
