AMY'S CARAMELS 
Makes 8-9 inch square pan.

1 c. sugar
1 c. white corn syrup
Pinch salt
2 tbsp. butter
2 c. whip cream
1 tsp. vanilla
1 c. chopped nuts

Combine sugar, syrup, salt, butter and 1 cup cream; boil to soft ball stage, stirring constantly. Add remaining cream slowly while cooking. Cook 45 minutes or 244 degrees (firm ball stage). Add vanilla and nuts, let stand 12 hours then cut into 1 inch squares, wrap individually.
