BEEF BRISKET 
Put 3 pound brisket in pan with:

1 tsp. salt
1/4 tsp. pepper
1 sliced onion
1 whole stalk celery
1/2 c. chili sauce

Add 1/4 cup water. Roast uncovered 45 minutes at 325 degrees. Pour 1 can of beer over and cover. Continue to roast for 3 hours or until tender. Slice against grain.
