APPLE POUND CAKE 
1 1/2 c. corn oil
2 c. sugar
1 tsp. baking soda
1 tsp. salt
3 c. flour
3 eggs
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 c. chopped nuts
2 c. chopped apples
1/2 c. golden raisins
2 tsp. vanilla

Beat oil, sugar, eggs and vanilla until well blended. Combine dry ingredients and add to sugar mixture. Stir in apples, nuts and raisins (if desired). Spoon batter into greased and floured 10 inch tube or Bundt pan. Bake 1 hour and 15 minutes at 325 degrees. Let stand in pan 10 minutes before removing from pan. Prick with a fork and add apple glaze.

GLAZE:

1/2 c. cider
1/2 c. apple jack
1/4 c. packed brown sugar
2 tbsp. butter

Combine and boil until sugar is dissolved. Pour over cake.
