MOM'S CHEESECAKE 
2 c. sour cream
1/4 c. cornstarch
1 tsp. vanilla
1/2 c. graham cracker crumbs
3 (8 oz.) pkgs. cream cheese, softened
1 c. sugar
4 eggs, separated
Cinnamon (to taste)

Cream sour cream and cream cheese in mixer bowl until light and fluffy. Add cornstarch, sugar, and vanilla; mix well. Blend in beaten egg whites gently. Sprinkle crumbs and cinnamon in buttered spring-form pan. Add sour cream mixture. Sprinkle additional cinnamon on top. Bake at 325 degrees for 1 hour; turn off oven. Let stand in closed oven 10 minutes; cool in open oven.
