PLUMP PEANUT BUTTER COOKIES 
3 c. flour
1/2 tsp. salt
1/2 tsp. baking soda
1 c. soft shortening
1 c. granulated sugar
1 1/2 c. firmly packed brown sugar
1 c. peanut butter (smooth or crunchy)
1 c. canned applesauce
1 tsp. vanilla
2 eggs
1 c. chopped raisins

Sift together flour, salt and soda. Mix white and brown sugars. Beat shortening with the peanut butter to cream it, then gradually beat in the sugar. Blend applesauce, eggs, and vanilla together and then, starting with the sifted ingredients, add them in small amounts alternately to beaten mixture. Beat to blend smooth after each addition. Stir in the raisins.

Heat oven to 350 degrees. Butter cookie sheets. Drop cookie dough by rounded teaspoonfuls on the sheet, spacing them somewhat apart. Bake in preheated oven 10 to 12 minutes. When it is desireable to limit the spreading of cookies, dust the buttered pans lightly with flour.
