PINEAPPLE BREAD PUDDING 
4 c. milk
2 c. bread cubes
1/4 c. butter
2 eggs
2 c. sugar
1/2 tsp. salt
1 tsp. vanilla extract
1 tsp. nutmeg
1/2 c. coconut
1/2 c. crushed pineapple

Scald milk; add bread cubes, butter. Beat eggs; add sugar and salt. Add milk mixture and vanilla extract. Pour into baking dish. Sprinkle with nutmeg. Place in pan of hot water. Bake in moderate oven at 350 degrees for 35-40 minutes.
