GENE'S BELGIAN SALAD 
6 heads endive
1/2 c. walnut meats
2 apples
Juice of 1 lemon
6 tbsp. olive oil
Salt

Cut endive into bite-size pieces; rinse and dry and put into salad bowl. Sprinkle endive with walnuts. Add apples, bits or slices, peeled, to bowl and sprinkle immediately with lemon juice. Toss. Add oil and salt to taste and toss again. Serve immediately. Serves 6.
