COLD CUCUMBER SOUP | |
3 cucumbers 2 tbsp. butter 1 leek white only 1 bay leaf 3 c. chicken broth 1 tsp. salt 1 c. cream Juice of 1/2 lemon 1 tsp. dill (I add more) 1 tbsp. flour Peel 2 cucumbers and saute in butter with leek and bay leaf for 20 minutes. Stir in flour. Add chicken broth and salt and simmer for 30 minutes. Blend 1/2 of mixture at a time in blender. Strain thru fine sieve and chill. Add 1 cucumber, peeled, seeded and grated. Cream lemon juice and dill. Adjust salt and pepper. Chill at least 30 minutes. Serves 6. |
