SPANISH RICE 
1 lb. ground beef
4 tsp. butter
1 c. chopped onion
1 green pepper, chopped
1/4 c. diced celery
2 c. stewed tomatoes
2 tsp. salt
1/8 tsp. pepper
3 c. hot cooked rice
Chopped parsley

Brown ground beef in butter. Add onions, green peppers and celery and simmer on range top until almost tender. Pour into oven proof casserole dish 4 quart or larger. Mix in tomatoes, salt, pepper and rice. Blend well. Garnish top with chopped parsley. Bake in oven for 30 minutes at 350 degrees. Serves 8.
