PEACH-CREAM PIE 
1 (3 oz.) pkg. peach gelatin
1 1/4 c. boiling water
1 pt. peach ice cream
2 med. size ripe peaches, peeled if desired, diced
1/4 tsp. almond extract
9-inch pie shell, baked and cooled

In bowl, dissolve gelatin in boiling water. Add ice cream; stir until melted. Chill until mixture has thickened but not set, 15 to 20 minutes. Fold in peaches and extract. Spoon into pie shell. Chill until firm, several hours. Good with whipped cream.
