CRUNCHY MEAT LOAVES 
2 eggs
8 oz. can water chestnuts, drained and finely chopped
1/4 c. packaged bread crumbs
1/8 tsp. pepper
1 1/2 lb. ground beef
1 tbsp. cornstarch
2 tbsp. chopped green onion
2 tbsp. soy sauce
1/4 tsp. garlic salt
1 c. chicken broth
1 tbsp. brown sugar
11 oz. can mandarin oranges, drained

Beat eggs until frothy in a medium sized bowl with bread crumbs, water chestnuts, pepper and garlic salt. Add ground beef and mix well. Form into 6 oval shaped loaves. Place loaves in a 13 x 9 x 2 inch pan. Bake at 350 degrees for 30 minutes. While loaves are baking, stir chicken broth into cornstarch in a small saucepan. Add brown sugar, green onions and soy sauce. Cook, stirring constantly until slightly thickened. Add mandarin oranges. To serve, spoon sauce over cooked loaves. Good served over rice. Serves 6.
