AUSTRIAN APPLE MUFFINS 
3 eggs
1 1/2 c. sugar
1/2 tsp. vanilla
1 c. oil
2 c. flour
1 tsp. cinnamon (I like more)
Dash of nutmeg
1 tsp. baking soda
4 to 6 apples, peeled & cut up
1/2 c. nuts (opt.)

Beat eggs 1 minute. Add sugar, vanilla and oil. Then add all the rest of the dry ingredients. Fold in apples and nuts and put in "lined" muffin tins. Bake at 350 degrees for 30 to 35 minutes.
