PUMPKIN NUT COOKIES 
1/2 c. shortening
1 c. sugar
2 eggs, beaten
1 c. Libby's pumpkin
2 c. sifted flour
4 tsp. baking powder
1 tsp. salt
2 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ginger
1 c. raisins
1 c. chopped nuts

Cream shortening and sugar until light and fluffy. Add eggs and pumpkin and mix well. Sift flour, baking powder, salt, and spices together. Stir in dry ingredients and mix until well blended. Add raisins and nuts. Drop by teaspoonful on greased cookie sheet. Bake at 350 degrees for 15 minutes. When done can be coated with powdered sugar.
