BANANA WALNUT MUFFINS 
1 3/4 c. whole wheat flour
2 c. oat bran
1 c. chopped walnuts
1 c. brown sugar
1/2 tsp. vanilla
2 1/2 c. mashed ripe bananas (about 5)
1 1/2 tsp. baking soda
1 stick butter
1 egg

Combine flour, bran, baking soda and walnuts in mixing bowl, set aside. Cream butter, brown sugar and beat in egg. Add vanilla and bananas; mix, but do not overmix.

Add flour mixture, stir with wooden spoon. Grease 12 muffin cup, tin or line with papers. Spoon batter into cups filling almost to top. Bake in 400 degree oven for 25 minutes.
