MOCK QUICHE 
1 c. egg substitute
1 oz. cheddar cheese, grated
1 med. bell pepper, chopped
3 slices tomatoes, chopped
1 tbsp. self-rising flour
1 tbsp. Parmesan cheese, grated
Seasoned salt to taste
1/2 tsp. dried parsley flakes
1-2 tbsp. jalapeno pepper
1 tbsp. evaporated milk
1/2 c. onion, chopped

In a chilled bowl, combine milk and egg substitute. Add salt and flour. Whip until mixture is frothy. Add vegetables and cheddar cheese. Pour into a quiche pan that has been sprayed with butter-flavor Pam. Make sure all ingredients are distributed evenly. Sprinkle with Parmesan and parsley. Bake at 400 degrees for about 20 minutes or until crusty and light golden brown. Serves 4.
