CHICKEN CURRY | |
1/3 c. shortening 1/3 c. chopped onion 1/3 c. chopped green pepper 2-3 lbs. chicken 2 tbsp. flour 1/2 tsp. curry powder 1 1/2 tsp. salt 1/2 c. water 1/4 c. lemon juice 8 oz. tomato sauce 1-2 minced cloves garlic Melt shortening. Add onion and green pepper and chicken. Fry until chicken is browned. (May add onion and pepper last.) Mix flour, curry powder and salt. Slowly stir in water and lemon juice to make paste. Add tomato sauce and garlic. Pour over chicken. Cover. Simmer over low heat until tender about 1 1/2 hours. Serve in rice ring. |
