MEXICAN FRUITCAKE 
1 (20 oz.) can crushed pineapple
2 tsp. baking soda
1 tsp. salt
2 c. all-purpose flour
2 c. sugar
2 eggs

Mix pineapple and soda together. Set aside. Put remaining ingredients in a bowl. Add pineapple and mix. Bake at 325 degrees for 30 minutes in a 9 x 13 inch pan.

CREAM CHEESE ICING
1 box confectioners' sugar
1 (8 oz.) pkg. cream cheese
1 tbsp. milk
1/2 tsp. vanilla
