SPINACH QUICHE 
1 tbsp. oil
1 onion, finely chopped
1 (10 oz.) pkg. frozen chopped spinach, thawed & drained
6 eggs
Salt (to taste)
Pepper (to taste)
3/4 lb. Muenster cheese, grated

Preheat oven to 350 degrees. Butter 9-inch quiche or pie pan. Saute onion. Stir in spinach and heat through. Beat eggs and grate in cheese. Combine eggs and cheese with spinach and onion. Pour in pan. Bake at 350 degrees for 40 to 45 minutes.

For extra taste, add sliced water chestnuts, bacon/ham and various spices.
