SUMMER PEACH BAKE 
6 to 8 firm ripe peaches (about 3 lbs.)
2 tbsp. light or dark brown sugar
2 tbsp. butter
1 egg
1 c. granulated sugar
1 c. all-purpose flour
1 tsp. baking powder
1/4 tsp. salt
1/2 tsp. nutmeg (opt.)

Preheat oven to 350 degrees. Peel peaches, slice into well-buttered 1 1/2 quart baking dish. Sprinkle with brown sugar, dot with butter. Beat the egg in a medium size bowl, sift into the egg the sugar, flour, baking powder and salt. Stir only until the mixture is blended. It will be dry and crumbly.

Spoon on top of peaches. Sprinkle nutmeg on top of crumb mixture. Bake for 35 minutes or until crumbs are lightly browned and mixture bubbles around the edge. Serve warm with cream or ice cream or just plain.
