CHILI CON QUESO 
1/4 small onion, finely diced
1/4 small green pepper, finely diced
1 sm. jar chopped pimentos
4 to 5 cloves garlic, pressed through garlic press
1 (2 lb.) pkg. Velveeta cheese, cubed
1 can tomatoes with jalapeno peppers
Crisco (NOT oil or butter)

Saute onion and green pepper in Crisco. Add pimentos, garlic and tomatoes and jalapeno peppers. Add cheese and simmer on low heat until cheese is melted (cheese will burn if too hot). Add more garlic if desired. Serve with corn chips, nachos, or cubes of French bread.
