TACO CASSEROLE 
1 lb. ground beef
1 sm. onion
Doritos tortilla chips
1 can Trappley's jalapeno pinto beans
1 can cream of mushroom soup
1 can Rotel tomatoes with green chilies
Longhorn sharp cheese

Brown ground beef and onion in skillet. Place layer of Doritos (approximately 3/4 inch thick) in bottom of 8 inch round casserole dish. Next, drain grease and place beef and onion over Doritos. Pour pintos over beef and onion, then mushroom soup over pintos. Finally, place Rotel tomatoes (without juice) over the soup. Place in 350 degree oven, covered for approximately 30 minutes. Top with grated cheese and place back in oven (uncovered) until cheese is melted.
