PEACH JAM (NO COOK) 
2 lbs. peaches, remove pits, not skin
1 lemon
2 1/4 c. crushed peaches
2 tbsp. lemon juice
5 c. sugar

Rinse clean plsatic containers and lids with boiling water. Prepare fruit. Measure fruit into large bowl along with lemon juice. Measure sugar into separate bowl. Stir sugar into fruit. Set aside for 10 minutes. Stir occasionally.

Mix 3/4 cup water and 1 box Sure Jell pectin in small saucepan, bring to a boil. Stir constantly. continue boiling and stirring for 1 minute. Stir mixture into fruit for 3 minutes. Fill containers to 1/2" of top. Cover with lids. Let stand in room for 24 hours then place in freezer. Refrigerate after opening.
