CHERRY-NUT BREAD | |
2 c. all-purpose flour 1 tsp. baking soda 1/2 tsp. salt 3/4 c. sugar 1/2 c. butter 2 eggs 1 tsp. vanilla 1 c. buttermilk or sour milk 1 c. chopped walnuts or pecans 1 c. chopped maraschino cherries Powdered sugar icing In a mixing bowl stir together the flour, baking soda, and salt; set aside. In large mixer bowl beat together sugar, butter, eggs, and vanilla until light and fluffy. Add flour mixture and buttermilk alternately to creamed mixture. Beat just until blended after each addition. Fold in walnuts or pecans and the cherries. Turn batter into lightly greased 9x5x3 inch loaf pan. Bake in 350 degree oven for 55-60 minutes. Cool in pan 10 minutes. Remove from pan; cool. Top with powdered sugar icing, if desired. Makes 1 loaf. |
