BREAKFAST PUFFE 
1 tbsp. vegetable oil
1 c. all-purpose flour
1 tsp. salt
1 c. milk
2 eggs
1 tbsp. vegetable oil
3 tbsp. lemon juice
3 tbsp. powdered sugar

Preheat oven to 425 degrees. Grease a heavy 10 inch iron skillet with 1 tablespoon oil. Heat skillet in oven.

Mix flour, salt, milk, eggs and 1 tablespoon oil. Beat with rotary beater until batter is smooth. Pour batter into hot skillet. Bake 30 minutes. No peeking! Sprinkle with lemon juice and powdered sugar while still warm. A Variation: Spread with butter and a good preserve. Serves 6.
