RHODE ISLAND COOKIES 
1/2 lb. butter (softened)
2 c. sugar
2 eggs
1 lb. Ricotta cheese
2 tsp. vanilla
4 c. flour
1 tsp. baking soda
1 tsp. baking powder

Mix all ingredients together in large bowl. Drop by teaspoonful onto ungreased cookie sheet. Flatten slightly with fork. Bake at 350 degrees for 10 to 15 minutes. Should not be brown. Frost while still hot with confectioners' sugar frosting. Yield: 60.
