BEST AU GRATIN POTATOES (MAKE
AHEAD)
 
We love this recipe without adding the extra cheddar cheese. However, when taking to a potluck dinner I often add a sprinkling of cheddar cheese 15 minutes before the timer goes off.

1 (2 lb.) pkg. frozen hash browns or tater tots (Southern Style)
1/2 (2 lb.) box Velveeta cheese
1/2 cup (1 stick) butter
2 cups Half & Half
8 oz. grated cheddar cheese, or to taste (optional)

Spread diced frozen hash browns in 13x9-inch pan.

Dice 1/2 box Velveeta cheese and butter. Combine with 2 cups Half & Half in a large microwave safe bowl. Microwave on high in 2 to 3 minutes increments until cheese is melted, stirring often.

Pour melted cheese mixture over frozen hash browns.

Cover and place in refrigerator overnight to cook next day or let sit all day before baking.

Remover cover, sprinkle with cheddar cheese and bake at 350°F for 1 hour, uncovered. Enjoy!
