DOUG'S HOLIDAY POTATO CANDY | |
These are excellent with coffee. We used to make them when I was a child. Happy Holidays! 1 potato (about the size of your fist) confectioners' sugar (enough for proper consistency) 1/2 tsp. vanilla or almond extract peanut butter (smooth or chunky) Peel, dice and boil potato till done. While the potato is still hot start adding the confectioners' sugar, and mixing with a fork. Note: The potato will melt but do not get alarmed. Just keep adding confectioners' sugar until a dough is formed. While mixing add some of the extract, this will cut down on the sweet taste. Sprinkle some confectioners' sugar on a surface suitable for rolling. Roll dough out like a cookie dough. Spread a layer of peanut butter on dough. Roll dough up like you would a jelly roll.
