CAMP VEGETABLE AND BEEF SOUP 
1 lb. ground beef
1 tbsp. instant minced onion
1 c. tomato juice or 3 tbsp. ketchup & 1 c. water
1 (10 oz.) pkg. frozen hashed brown potatoes or
2 c. shredded fresh potatoes
1 (10 oz.) pkg. frozen mixed vegetables or
1 can mixed vegetables
3 c. water
2 tsp. salt
1/4 tsp. pepper
1 tbsp. oregano leaves

Brown meat quickly with onion. Add remaining ingredients and simmer until vegetables are tender. Makes 6 servings.
