CARAMEL TAPIOCA 
2 c. hot water
1 c. brown sugar
Pinch of salt
4 tbsp. Minute Tapioca
1 tsp. vanilla
1/2 c. chopped nuts (may use up to 2/3 c.)

Mix water, brown sugar, tapioca and salt. Cook until it thickens, stirring constantly (or in microwave about 10 minutes stirring 2-3 times). Remove from stove and add vanilla and nuts.

Since microwave ovens vary in power, you may need to adjust your cooking time.
