BAR- B- Q BEEF 
3 to 5 lb. beef brisket or chuck roast
2 tbsp. liquid smoke
1 tsp. garlic
1 tsp. onion salt
2 tsp. celery salt
1 1/2 tsp. salt
2 tsp. Worcestershire sauce
2 tsp. pepper
1 c. barbecue sauce

Mix altogether except barbecue sauce and beef. Rub onto side of beef; seal in foil and refrigerate overnight. Put wrapped meat in roaster and cover. Bake 4 hours at 300 degrees. Bake another hour or so and baste several times using 1 cup barbecue sauce.

Barbecue sauce:
1 c. ketchup
3/4 c. water
3 tsp. Worcestershire sauce
4 tbsp. grated onion
4 1/2 tbsp. vinegar
1 1/2 tbsp. brown or white sugar

Blend and simmer 10 minutes. Pass extra in bowl.
