STUFFED SHELLS 
1 pkg. stuffing shells
1 lb. tofu
1 med. eggplant
Tomato sauce
Parsley
Paprika
Mrs. Dash to taste
Salt
Cooked shrimp (optional)

Cook shells according to directions. Peel, boil, and mash eggplant. Mash tofu. Mix eggplant, tofu, parsley, paprika, Mrs. Dash, and salt. Fill shells with eggplant mixture. Layer shells in baking dish; top with tomato sauce and shrimp if you are including this in the recipe. Bake at 350 degrees for 45 to 60 minutes. Serves 6 (about 26 shells).
