CHILE PIE FOR 4 OR 5 
1 (19 oz.) can chili
4 c. corn chips
2/3 c. chopped onion
1 1/2 c. shredded Colby or cheddar cheese

Layer 2 1/2 cup corn chips; onion, 1/2 cup cheese and chili in a 1 1/2 quart casserole. Top with remaining corn chips. Bake in preheated oven (375 degrees) about 25 minutes. Top with remaining cheese and continue baking 5 minutes. Garnish with sour cream and ripe olives, (optional).
