SWEET CUCUMBER PICKLES 
7 lbs. cucumbers, sliced real thin
3-4 c. lime
2 gallons water

Mix lime and water; soak 24 hours. Stir occasionally gently with hand. Rinse well after 24 hours. Cover with ice water, set for 3 hours. Drain and cover with 2 quarts vinegar. Mix: 1 tbsp. salt 5 tsp. pickling spice

Pour over cukes. Let stand overnight. Bring to a boil about 35 minutes. Put pickles in jars. Boil vinegar to thick syrup. Add green food coloring. Pour over pickles.
