CHILI SAUCE 
4 qts. peeled and chopped tomatoes
2 c. chopped green pepper
2 c. chopped onion
1 hot pepper (optional)
2 tbsp. celery seed
1 tsp. ground ginger
1 tbsp. mustard seed
1 tsp. ground nutmeg
1 bay leaf
2 (3 inch) sticks cinnamon
1 tsp. whole cloves
1 c. firm packed brown sugar
2 c. white sugar
2 1/2 tbsp. salt

Combine tomatoes, peppers, onion, hot pepper. Put in celery seed, mustard, bay leaf, cloves, ginger, nutmeg and cinnamon loosely in a thin white cloth; tie top tightly, add to tomato mixture and boil until 1/2 the original amount. Stir frequently. Add sugar, vinegar and salt. Boil about 5 minutes. Remove spices. Pack into hot clean jars and seal. Makes about five pints.
