ANITA'S ITALIAN CREAM CAKE AND
FROSTING
 
2 c. plain flour + 1 tsp. baking soda
2 c. sugar
1 tsp. vanilla
5 egg yolks
5 egg whites, stiffly beaten
1 stick butter
1/2 c. Wesson oil
1 c. buttermilk
1 c. coconut
1 c. chopped nuts

Mix all ingredients, then fold in egg whites. Blend well. Bake at 350 degrees for 25 minutes. NOTE: If using self rising flour, omit soda.

CREAM CHEESE FROSTING:

16 oz. cream cheese
1 stick butter
2 boxes powdered sugar
Just enough milk to spread
2 tsp. vanilla
1 c. chopped pecans
1/2 - 3/4 c. coconut (opt.)
