JICAMA ORANGE SALAD 
2 or 3 c. cubed jicama
4 oranges, peeled, sectioned, cut in chunks
4 green onions, chopped
1/4 c. chopped cilantro

Place in large bowl. Refrigerate several hours. Before serving, remove and drain liquid off salad and mix the liquid with:

1 tbsp. lime juice (fresh squeezed)
1 tbsp. salad oil
2 tbsp. plain yogurt
Salt (very small amount!)

Toss dressing over salad. Serve immediately!
