BROCCOLI & CORN SCALLOPS 
2 tbsp. onion, chopped
2 tbsp. butter
1 tbsp. flour
1 1/4 c. milk
1 c. Cheddar cheese, shredded
12 oz. can corn
2 (10 oz.) frozen broccoli spears
1/2 c. cracker crumbs

Cook broccoli and drain. Saute onion in 1 tablespoon butter. Blend in flour. Gradually add milk; cook stirring constantly until thick. Add cheese, stir until melted. Add corn and 1/4 cup crumbs. Arrange broccoli in large casserole. Pour cheese over broccoli. Mix remaining crumbs and butter, sprinkle over casserole. Bake at 350 degrees for 30 minutes. May serve over rice.
