PEANUT BUTTER PIE 
"Pie" is a misnomer. This is a cross between a cheese cake and a Reese's Peanut Butter Cup. Very rich. A little goes a long way.

1 c. graham cracker crumbs (9 double crackers)
1/4 c. firmly packed light brown sugar
1/4 c. melted butter (1/2 stick)

Combine the above ingredients and press into the bottom and sides of a 9 inch (or even 10 inch) spring form pan.

2 c. creamy peanut butter
2 c. sugar
2 (8 oz.) pkgs. cream cheese
2 tbsp. (1/4 stick) melted butter
2 tsp. vanilla flavoring

Beat the above 5 ingredients in a large bowl. Fold 1 1/2 cup of whipped cream into the above mixture. Pour the mixture into spring form pan.

4 oz. semi-sweet chocolate
3 tbsp. + 2 tbsp. hot coffee

Melt above 2 ingredients in saucepan over low heat. Spread melted chocolate mixture over the top of the "pie". Refrigerate several hours.
