IMPOSSIBLE BROCCOLI PIE 
2 (10 oz.) pkgs. frozen chopped broccoli
3 c. shredded cheddar cheese (12 oz.) sharp cheddar if you like
2/3 c. chopped onions
1 1/3 c. milk (may use 1 1/2 c. buttermilk if you desire)
3 eggs
3/4 c. buttermilk baking mix (may use Bisquick-Lite if you desire)
3/4 tsp. salt
1/4 tsp. black pepper

Heat oven to 400 degrees. Grease 10 x 1 1/2-inch pie plate. Rinse broccoli under running cold water to thaw. Pat broccoli dry. Mix broccoli, 2 cups of the cheese, and the onion in the greased pie plate.

Beat the milk, the eggs, the baking mix, and the salt and pepper until smooth, 15 seconds in a blender on HIGH, or 1 minute with a hand beater. Pour into the plate.

Bake until the knife from the center comes clean, 25-35 minutes. Top with the remaining cheese and bake until the cheese is melted, one to two minutes longer. Let cool. Garnish with tomato slices if desired. Makes 6 servings at 405 calories per serving.

A slightly different result will occur if you substitute dried tomatoes (placed under the final cheese layer) instead of the fresh one on top.
