CARROT PECAN COOKIES 
1 1/2 c. flour
1 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/4 tsp. cinnamon
3/4 tsp. cardamom (optional)
3/4 c. light brown sugar
1 egg
1/2 tsp. vanilla extract
1 c. grated carrots
1 c. chopped pecans
1/2 c. raisins
8 tbsp. room temperature butter

Combine dry ingredients. Cream butter and sugar. Add egg and vanilla. Add dry ingredients. Stir in carrots, nuts, and raisins. Drop by generous tablespoons onto greased baking sheet, 2 inches apart. Bake until edges are lightly browned, 20-25 minutes, at 325 degrees.
