APRICOT OATMEAL BARS 
CRUMB MIXTURE:

1 1/4 c. flour
1 1/2 c. quick Quaker oats
1/2 c. sugar
3/4 c. melted butter
1/2 tsp. baking soda
1/4 tsp. salt
2 tsp. vanilla extract

FILLING:

1 (10 oz.) jar apricot preserves
1/2 c. coconut

Combine all ingredients for crumb mixture. Beat at slow speed until crumbly. Reserve 1 cup of mixture. Press remaining mixture into 9x13 inch pan. Spread apricot preserves over crumb mixture to within 1/2 inch of edges. Sprinkle with reserved crumb mixture mixed with coconut. Bake at 350 degrees for 22-27 minutes or until edges are lightly browned. Yield: 3 dozen.
