LEMON STRAWBERRY SURPRISE 
4 eggs
1/4 tsp. cream of tartar
Strawberries
1 1/4 c. sugar
6 tbsp. lemon juice
1 c. whipping cream
Grated lemon rind

Preheat oven to 225 degrees. Beat 4 egg whites with 1/4 teaspoon cream of tartar until stiff. Beat in 3/4 cup sugar until smooth and glossy. Make next (or crust) in glass pie dish. Bake 1 1/4 hours. Cool in oven. Beat 4 egg yolks with 1/2 cup sugar. Add 1 teaspoon grated lemon rind and 6 tablespoons lemon juice. Cook over boiling water until thick. Cool. Beat 1 cup whipping cream until stiff. Fold into lemon custard. Pour into "Nest" and chill. Decorate with strawberries and mint leaves.
