ROCKY ROAD CHEESE FRUIT WHIP 
1 env. diet lime gelatin
3/4 c. cottage cheese
1 (4 1/2 oz.) carton frozen non-dairy whipped topping (thawed)
1 c. melon balls
1 (8 oz.) can crushed pineapple, packed in own juice, drained
2 tbsp. snipped mint leaves (optional)

Sprinkle gelatin on cottage cheese to soften. Stir and let stand for a few minutes. Stir again until gelatin is dissolved. Fold in whipped topping and fruits. Cover and refrigerate until ready to serve.
