PEANUT BUTTER PIE 
1 c. powdered sugar
1/2 c. peanut butter
3 tbsp. cornstarch
2/3 c. sugar
1/4 tsp. salt
2 c. milk
1 tbsp. butter
3 eggs, separated
1 tsp. vanilla
1 baked 9 inch pie shell

Mix powdered sugar and peanut butter together until crumbly. Cook cornstarch, sugar, salt, butter, and milk in double boiler until mixture begins to thicken. Add slightly beaten egg yolks and vanilla; continue cooking, stirring constantly, until thick. Remove from heat; cool. Place half the peanut butter mixture in bottom of pie shell. Add creamy filling; beat egg whites and place over filling. Top with remaining peanut butter mixture. Bake in 350 degree oven until brown, approximately 15 to 20 minutes.
