MEXICAN CHEESE SALAD | |
1 lb. ground beef, fry and drain well 1 (15 oz.) can kidney beans, drained Add beans to hamburger; place in refrigerator overnight. Chop 1-2 avocados (can mash also), and add small bottle Thousand Island dressing and a dash of Tabasco. Chop 1 onion and add to hamburger mixture. Grate 1 cup cheddar cheese and add to cold hamburger. Crush one small bag tortilla chips, cut lettuce and tomatoes as much or as little as you like. Add last 3 items before serving so chopped lettuce remains crisp and tomatoes will not wilt. A good summer day salad also enough to serve a large group. |
