ZUCCHINI CASSEROLE 
1 med. or 2 sm. zucchini
1 lg. can of Stove Top stuffing mix
1 c. grated cheddar cheese
1 can cream of chicken soup

Cook zucchini until tender. I add a little onion to the cooking water. I also slice the zucchini in rounds.

Prepare the Stove Top as directed on package. Grease a 13 x 9 cake pan; place a layer of Stove Top on the bottom of the pan. Place the zucchini on top of dressing; place the rest of dressing on top of zucchini.

Pour the undiluted cream of chicken soup on top of dressing. Sprinkle grated cheddar over top. Bake in a 350 degree oven about 20 minutes.

You could microwave if you like. Also, if you want, you could cook this in a two-quart casserole.

Since microwave ovens vary in power, you may need to adjust your cooking time.
